Description

Quick and satisfying corn fritters perfect for lunch or as a side dish, ready in 20 minutes.


Ingredients

  • 2 cups corn (fresh kernels, drained canned, or thawed frozen)
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs
  • 1/2 cup milk (any kind)
  • 2 tablespoons green onion or regular onion, finely chopped
  • Optional add-ins: 1/2 cup shredded cheddar, pinch of paprika or chili flakes, chopped parsley
  • Oil for frying: enough to coat the bottom of the pan

Instructions

  1. Mix the dry ingredients: In a medium bowl, stir together flour, baking powder, salt, and black pepper.
  2. Add the wet ingredients: Crack in the eggs and pour in the milk. Stir until thick batter forms.
  3. Fold in corn and onion: Add the corn and chopped onion, plus any optional add-ins, and stir just until combined.
  4. Fry until golden: Heat a skillet over medium heat, add oil, and scoop about 2 tablespoons of batter per fritter. Cook for 2-3 minutes on each side until crispy and golden.

Notes

For extra crispiness, ensure corn is well dried and the pan is hot before frying. Serve with your favorite dips.
