- ½ teaspoon cayenne pepper (optional)

Instructions
- Start by marinating your chicken. In a bowl, whisk together the olive oil, smoked paprika, ground cumin, onion powder, garlic powder, chili powder, cayenne pepper, lime juice, salt, and pepper. Add your chicken thighs, ensuring they’re well coated. Cover the bowl and let it marinate in the fridge for at least 30 minutes.
- Preheat your grill or skillet over medium-high heat. If using a grill, lightly oil the grates to prevent sticking.
- Add the marinated chicken to the grill or skillet in a single layer. Cook for about 5-7 minutes on each side until the chicken reaches an internal temperature of 165°F (75°C).
- Transfer the chicken to a cutting board and allow it to rest for a few minutes. Then chop it into bite-sized pieces.
- Serve your Copycat Chipotle Chicken warm, garnished with fresh cilantro. Pair it with rice, wrap it in tortillas, or pile it on top of a salad.
