- 2 cups cooked chicken, shredded or cubed
- 1 cup uncooked long-grain white rice
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- 1 cup frozen mixed vegetables
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme or parsley
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (optional)
- 2 tablespoons olive oil or butter
Instructions
- Preheat your oven to 350°F (175°C).
- Heat olive oil or butter in a skillet over medium heat. Add the onion and sauté until translucent.
- Add the garlic and sauté for another minute.
- Combine the cooked chicken, cream of chicken soup, chicken broth, cooked rice, and frozen vegetables in a bowl.
- Transfer the mixture into a greased 9×13-inch baking dish, packing it slightly.
- Cover with aluminum foil and bake for 25-30 minutes.
- Remove the foil and bake for an additional 10-15 minutes.
- Let it rest for about 5 minutes before serving.
Notes
For a lighter version, you can substitute cauliflower rice or use brown rice for extra fiber. Perfect for meal prep, leftovers can be stored for up to 3-4 days.
