Ingredients

  • 1 pound white fish fillets (like cod or tilapia)
  • 1 can (14 ounces) coconut milk
  • 4 cups fish stock (or vegetable broth for a vegetarian version)
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons lime juice
  • Zest from 1 lime
  • 2 cups fresh spinach or kale
  • 1 bell pepper, sliced (any color)
  • 1 tablespoon fish sauce (or soy sauce for a vegetarian version)
  • 2 tablespoons olive oil or coconut oil
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish (optional)
  • Chili flakes, for a spicy kick (optional)

Instructions

  1. Begin by heating the olive oil in a large pot over medium heat. Toss in the chopped onion and sauté until it becomes translucent, usually around 3-5 minutes.
  2. Add the minced garlic and grated ginger to the pot. Stir them in and sauté for another minute until fragrant.
  3. Pour in the fish stock or vegetable broth, followed by the coconut milk. Give it a stir and bring the mixture to a gentle simmer.
  4. Once simmering, add the sliced bell pepper and fish sauce (or soy sauce for vegetarian version).
  5. Slowly place your fish fillets into the soup. Cook for about 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.
  6. Squeeze in the fresh lime juice and add the lime zest. Stir in the spinach, or kale, until wilted.
  7. Finally, taste your soup. Add salt and pepper as needed, and sprinkle in some chili flakes if you want to turn up the heat!
  8. Serve hot, garnished with fresh cilantro for that extra perk of flavor.

Notes

For lovely presentation, serve in vibrant bowls garnished with cilantro and chili flakes. Excellent with crispy bread or a refreshing salad.
