- 1 can (15 oz) pure pumpkin puree
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 cup vegetable oil
- 1/2 cup unsweetened applesauce
- 4 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1 teaspoon salt
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour a 9×5-inch loaf pan.
- Combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, and applesauce in a large mixing bowl, whisking until smooth.
- Add the eggs into the mixture, one at a time, whisking well after each addition.
- Sift together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt in a separate bowl.
- Gradually add the dry ingredients to the pumpkin mixture, stirring gently with a spatula or wooden spoon.
- Fold in the nuts or chocolate chips, if using.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 60 to 70 minutes, until a toothpick inserted comes out clean.
- Remove from the oven and cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For a gluten-free version, substitute all-purpose flour with a gluten-free blend. You can also use honey or maple syrup instead of granulated sugar.
