Ingredients
- Fresh corn on the cob (4 ears)
- Mayonnaise (1/2 cup)
- Sour cream (1/2 cup)
- Cotija cheese (1 cup, crumbled)
- Lime juice (2 tablespoons)
- Chili powder (1 teaspoon)
- Fresh cilantro (1/4 cup, chopped)
- Salt (to taste)
- Optional: Hot sauce or Tajín seasoning for extra heat
Instructions
- Husk the corn and remove all the silk. Rinse the ears under cold water.
- Bring a large pot of salted water to a boil. Carefully add the ears of corn and let them cook for about 4-6 minutes until tender.
- Prepare the sauce by mixing the mayonnaise, sour cream, lime juice, and salt in a bowl. Stir in chili powder, adjusting according to taste.
- Remove the corn and let it cool slightly.
- Brush each ear of corn generously with the creamy mixture.
- Sprinkle the crumbled Cotija cheese over the corn.
- Finish with cilantro and an extra dash of chili powder or hot sauce if desired. Serve immediately.
Notes
Feel free to swap mayonnaise for Greek yogurt or use a vegan mayo for a vegan option. For lower carbs, consider using cauliflower instead of corn.
