A warm, spiced treat bringing together the flavors of cinnamon rolls and the natural sweetness of dates into a luscious dessert.

- 1 cup pitted Medjool dates, chopped
- 1 teaspoon baking soda
- 1 cup boiling water
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup brown sugar, packed (for cinnamon swirl)
- 1 tablespoon ground cinnamon (for cinnamon swirl)
- 1/4 cup unsalted butter, softened (for cinnamon swirl)
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
- 1/2 teaspoon vanilla extract (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
- Combine the chopped dates and baking soda in a small bowl, then pour boiling water over them. Let sit for about 10-15 minutes.
- Cream together the softened butter and brown sugar in a large mixing bowl until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Toss in the vanilla extract and continue mixing.
- Whisk together the flour, baking powder, cinnamon, nutmeg, and salt in another bowl.
- Gradually add this dry mixture to the wet ingredients, careful not to overmix.
- Pour the softened date mixture (including water) into the cake batter and stir until just incorporated.
- Mix the brown sugar, cinnamon, and softened butter in a small bowl to create the cinnamon swirl paste.
- Pour half of the cake batter into the prepared pan, dollop the cinnamon mixture on top, then scoop the remaining batter and swirl if desired.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Prepare the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth. Drizzle on the cooled cake.
Notes
Best served warm with whipped cream or fresh fruit. Can be made vegan by using flax eggs and coconut oil.
