- ½ cup unsalted butter (softened)
- 1 cup granulated sugar
- ½ cup brown sugar (packed)
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk (or plain yogurt)
- 2 cups peeled and diced apples (Granny Smith or Honeycrisp)
- Optional: ½ cup chopped walnuts or pecans
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- Whisk together the flour, baking powder, baking soda, ground cinnamon, and salt in a medium bowl.
- Cream the softened butter with both sugars using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- Gradually add the dry ingredient mixture to the butter mixture, alternating with the buttermilk.
- Fold in the diced apples and nuts (if using).
- Pour the batter into the prepared baking pan, spreading it evenly.
- Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
