A summer barbecue recipe featuring tender chicken coated in smoky chipotle BBQ sauce, paired with a sweet and creamy grilled corn side.

- 4 boneless, skinless chicken breasts
- 1 cup of your favorite BBQ sauce
- 2 tablespoons of chipotle peppers in adobo sauce, finely chopped
- 1 tablespoon olive oil
- Salt and black pepper to taste
- Fresh cilantro for garnishing (optional)
- 4 ears of fresh corn on the cob, husked
- 2 tablespoons butter
- ½ cup heavy cream
- 1 tablespoon sugar (optional, depending on corn sweetness)
- Salt and pepper, to taste
- ¼ cup grated Parmesan cheese (optional)
- 2 green onions, finely chopped for garnish
Instructions
- Start by preheating your grill to medium-high heat.
- While the grill heats up, prepare your chicken. In a large bowl, combine the BBQ sauce with the minced chipotle peppers. Toss in the chicken breasts and coat them thoroughly. Season with salt and black pepper.
- Brush the grill grates with olive oil, then place the marinated chicken on the grill. Cook for about 7-8 minutes per side, until the internal temperature reaches 165°F.
- While the chicken is cooking, grab your corn. Place the husked corn on the grill, turning occasionally until the kernels are charred and tender, about 10-15 minutes.
- When the corn is done, let it cool slightly before slicing the kernels off the cob. In a large skillet over medium heat, melt the butter. Add in the grilled corn, heavy cream, and sugar (if using).
- Stir everything together and allow it to cook for about 5 minutes until heated through and creamy. Toss in salt and pepper, to taste, and finish with grated Parmesan if desired.
- Once the chicken is ready, pull it off the grill and let it rest for a few minutes before slicing.
- Serve the sliced chicken on a platter, drizzled with any remaining chipotle BBQ sauce, alongside a scoop of creamed grilled corn. Sprinkle fresh cilantro over the top for garnish!
Notes
Feel free to substitute or omit optional ingredients. Chicken thighs can be used for more moisture, and healthier alternatives like coconut milk or nutritional yeast can replace heavier components.
