  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup cold unsalted butter, diced
  • 6 to 8 tablespoons ice water
  • 2 cups cooked chicken, shredded
  • 1 cup carrots, chopped
  • 1 cup frozen peas
  • 1 cup celery, chopped
  • 3 tablespoons butter
  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Start by making the pie crust. In a large bowl, mix the flour and salt. Then, add in the cold, diced butter and mix it until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough holds together. Shape it into a disk, wrap it in plastic, and refrigerate for at least 30 minutes.
  2. In a large skillet over medium heat, melt the butter. Add the chopped carrots, celery, and cook for about 5 minutes until they soften. Stir in the flour, mixing well, and cook for an additional minute.
  3. Gradually whisk in the chicken broth and milk. Stir this mixture continuously until it thickens—about 5 to 7 minutes. Once thickened, add in the cooked chicken, peas, thyme, salt, and pepper. Once combined, take it off the heat.
  4. Preheat your oven to 425°F (220°C). Roll out the chilled pie dough on a floured surface to fit your pie plate. Place the crust in the pie plate after gently unrolling it.
  5. Pour the chicken mixture into the pie crust, spreading it evenly. Roll out the second dough piece for the top crust, place it over the filling, and seal the edges together. Remember to cut a few slits in the top crust to allow steam to escape.
  6. Bake in your preheated oven for 30 to 35 minutes until the crust is golden and the filling is bubbly. Let it cool for a few minutes before serving.

Notes

For a quicker option, use store-bought pie crust. You can also substitute ground turkey or beef for the chicken if desired.
