- 1 pound ground chicken
- 1/2 cup breadcrumbs (panko)
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon onion powder
- 1 tablespoon olive oil
- 1 tablespoon butter (or ghee)
- 1/2 cup chicken broth
- 1/4 cup freshly squeezed lemon juice
- 2 tablespoons capers, rinsed and drained
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Combine the ground chicken with breadcrumbs, Parmesan cheese, egg, minced garlic, parsley, salt, pepper, and onion powder in a large mixing bowl. Mix until well combined, but be careful not to over-mix.
- Form the mixture into meatballs about 1 inch in diameter.
- Heat olive oil and butter in a large skillet over medium heat. Add the meatballs in batches, cooking until golden brown on all sides, around 8-10 minutes. Remove the meatballs and set aside.
- Add chicken broth and lemon juice to the same skillet, scraping any browned bits from the bottom. Bring to a simmer and stir in the capers.
- Return the meatballs to the skillet, coating them with the sauce. Let them simmer for an additional 5 minutes to absorb the flavors.
- Sprinkle with fresh parsley just before serving.
