- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs (Italian-style preferred)
- 1/2 cup grated Parmesan cheese
- 2 cups marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- Fresh basil, for garnish (optional)
- Olive oil, for frying
Instructions
- Preheat your oven to 375°F (190°C).
- Pound the chicken breasts to an even thickness, about 1/2 inch. Season with salt and pepper.
- Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan, oregano, and garlic powder. Dip each chicken breast in flour, followed by the egg mixture, then coat with breadcrumb mix.
- Heat olive oil in a skillet over medium-high heat. Add the breaded chicken and fry for 4-5 minutes on each side until golden brown.
- Transfer the chicken to a baking dish. Pour marinara sauce over each piece and sprinkle mozzarella cheese on top.
- Bake for 20-25 minutes until the cheese is bubbly and golden.
- Let it rest for a few minutes and garnish with fresh basil before serving.
Notes
For gluten-free, substitute flour and breadcrumbs with gluten-free alternatives. For vegetarian, use eggplant or portobello mushrooms.
