- 2 slices thick-cut bread (like sourdough or Italian)
- 1 cup cooked chicken, shredded or diced
- 1/2 cup marinara sauce
- 1 cup mozzarella cheese, shredded
- 1/4 cup Parmesan cheese, grated
- 2 tablespoons fresh basil, chopped (optional)
- 2 tablespoons butter (for grilling)
- Salt and pepper to taste
Instructions
- Start by gathering all your ingredients.
- Combine the cooked chicken, marinara sauce, mozzarella, and half of the Parmesan cheese in a mixing bowl. Stir until well mixed.
- Spread a thin layer of butter on one side of a slice of bread.
- Place the buttered side down on a skillet over medium heat.
- Spoon about half of the chicken mixture onto the slice in the pan.
- Sprinkle the remaining Parmesan cheese on top.
- Butter one side of the second slice of bread and place it on top, buttered side up.
- Cook for about 4-5 minutes until the bottom slice is golden brown.
- Carefully flip the sandwich using a spatula.
- Cook the other side until golden and the cheese is melted, about another 4-5 minutes.
- Remove the sandwich from the skillet and let it rest for a minute before slicing.
Notes
For a healthier twist, use whole grain bread and part-skim mozzarella.
