Ingredients

  • 4 large russet potatoes, thinly sliced
  • 2 cups shredded sharp cheddar cheese
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/2 cup unsalted butter
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • Fresh chives or parsley for garnish (optional)

Instructions

  1. Start by preheating your oven to 375°F (190°C).
  2. While the oven’s heating, peel and thinly slice your potatoes using a mandolin or a sharp knife.
  3. In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until soft and translucent, about 4-5 minutes.
  4. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  5. Sprinkle in the flour, stirring constantly until the mixture is smooth. Gradually mix in the heavy cream and milk, continuing to stir until the sauce thickens slightly.
  6. Season the sauce with salt, black pepper, and paprika if using. Stir in 1.5 cups of the shredded cheddar cheese until melted and fully combined.
  7. In a greased 9×13 inch baking dish, layer half of the sliced potatoes. Pour half of the cheese sauce over the potatoes, then repeat with the remaining potatoes and sauce.
  8. Sprinkle the reserved shredded cheese on top.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes. Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbling and golden brown.
  10. Once out of the oven, allow it to rest for about 10 minutes before serving.

Notes

Store leftovers in an airtight container for 3-4 days or freeze for up to one month.
