  • 8 oz cream cheese, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup caramel sauce (store-bought or homemade)
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 325°F (160°C). Grease and flour a large bundt pan or loaf pan.
  2. Beat together the softened butter and cream cheese until smooth and creamy, about 2-3 minutes. Gradually add in the granulated sugar and beat until fluffy, roughly 3-4 minutes.
  3. Add the eggs one at a time, allowing each to incorporate before adding the next. Mix in the vanilla extract until just combined.
  4. Whisk together flour, baking powder, baking soda, salt, and cinnamon in a separate bowl. Gradually add this dry mixture to the wet ingredients at low speed until just combined.
  5. Spoon half of the batter into the prepared pan, drizzle half of the caramel sauce, and sprinkle half of the nuts. Then spoon the remaining batter on top, followed by the rest of the caramel sauce and nuts.
  6. Swirl the batter slightly with a knife to create a marbled effect.
  7. Bake for about 60 minutes, or until a toothpick comes out clean, covering with foil if browning too quickly.
  8. Allow the cake to cool for 15-20 minutes before inverting onto a wire rack. Drizzle with additional caramel sauce once cooled.

Notes

For a dairy-free option, substitute butter with a dairy-free version. Low-carb alternatives include almond flour and monk fruit sweetener.
