Ingredients

  • 2 large russet potatoes (or frozen fries for convenience)
  • 1 cup shredded cheese (like cheddar or pepper jack)
  • ½ cup sour cream or Greek yogurt
  • ½ pound ground chicken or turkey (or beef or lamb, depending on preference)
  • 1 tablespoon Cajun seasoning (store-bought or homemade)
  • ¼ cup green onions, chopped
  • ½ cup jalapeños, sliced (fresh or pickled)
  • Cooking oil (for frying or roasting)
  • Optional: beef bacon, turkey bacon, or chicken bacon, cooked and chopped
  • Optional: hot sauce, for an extra kick

Instructions

  1. Start by preparing the potatoes. If using russet potatoes, wash and peel them. Cut them into fries, about ¼ to ½ inch thick. Soak the cut fries in cold water for about 30 minutes.
  2. Heat oil in a deep fryer or large pot to 350°F (175°C). If you’re aiming for a healthier version, preheat your oven instead and spread the soaked fries onto a lined baking sheet. Drizzle with oil and sprinkle with salt, tossing to coat evenly.
  3. If frying, add the prepared fries in batches and cook until they turn golden and crispy, usually about 5-6 minutes per batch. For the oven, bake according to package instructions or until crispy, turning occasionally for even cooking.
  4. While the fries are cooking, take a skillet and cook the ground chicken with the Cajun seasoning over medium heat. Stir it occasionally until fully cooked and browned, about 8-10 minutes.
  5. Once your fries are ready, assemble them on a large platter or individual plates. Start with a layer of fries, then evenly distribute the cooked ground chicken.
  6. Sprinkle the shredded cheese generously over the top. For that gooey goodness, pop the assembled fries under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.
  7. Finish off your creation! Top with sour cream, chopped green onions, and jalapeños. If you’re feeling adventurous, add crumbled bacon and a drizzle of hot sauce for an extra kick.
