- 1 medium butternut squash, peeled and diced
- 6 large eggs
- 1 cup ricotta cheese
- 1 cup cooked beef sausage, crumbled (or chicken/turkey sausage)
- 1 cup spinach, chopped (fresh or frozen)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme (or fresh, if available)
- 1 tablespoon olive oil
- Optional: Fresh herbs for garnish (e.g., parsley or chives)
Instructions
- Preheat the oven to 375°F (190°C). In a skillet, heat olive oil over medium heat, then add onion and garlic, sautéing for about 2–3 minutes until fragrant.
- Add the diced butternut squash to the skillet. Cook for about 10 minutes, stirring occasionally until tender.
- Incorporate the crumbled sausage and chopped spinach. Continue to cook for another 5 minutes until spinach wilts.
- Whisk together the eggs, ricotta cheese, salt, pepper, and thyme in a bowl until mixed.
- Pour the egg mixture over the sausage and vegetables in the skillet, stirring gently to combine.
- Transfer the skillet to the oven and bake for 20-25 minutes until set and lightly golden.
- Allow the frittata to cool for a few minutes before slicing and serving.
