Description

Delicious, protein-packed biscuits perfect for a nutritious start to your day.

Ingredients

Scale
  • 1 cup whole wheat flour (or almond flour for a gluten-free option)
  • 1 cup oats (quick or rolled)
  • 1/2 cup protein powder (vanilla or chocolate)
  • 1/2 cup Greek yogurt (or a dairy-free yogurt for vegan)
  • 1/4 cup honey or maple syrup (for a vegan option)
  • 1/4 cup almond milk (or any milk of your choice)
  • 1 large egg (or a flax egg for vegan)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • A pinch of salt
  • Optional: 1/2 cup add-ins such as chocolate chips, dried fruit, or nuts

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix the whole wheat flour, oats, protein powder, baking powder, baking soda, and salt in a large bowl.
  3. Whisk together the Greek yogurt, honey (or maple syrup), almond milk, and egg (or flax egg) in a separate bowl.
  4. Add the wet mixture into the dry mixture and stir gently until just combined; fold in any optional add-ins.
  5. Drop dough balls onto the prepared baking sheet, spacing them about two inches apart.
  6. Bake in the preheated oven for about 15-20 minutes, or until the edges turn golden brown.
  7. Allow to cool for a few minutes on the baking sheet before transferring them to a wire rack.

Notes

Great alternatives include using almond or coconut flour for lower carbs, and stevia for lower-calorie sweetening.
