Delicious cheesecake bars with a creamy filling and a tangy black raspberry swirl, all on a buttery graham cracker crust.

- 1 ¾ cups graham cracker crumbs for the crust
- ¾ cup melted butter for the crust
- 2 tablespoons sugar for the crust
- 16 oz cream cheese, softened for the cheesecake filling
- 1 cup granulated sugar for the cheesecake filling
- 3 large eggs for the cheesecake filling
- 1 teaspoon vanilla extract for the cheesecake filling
- ½ cup sour cream for the cheesecake filling
- 1 cup fresh or frozen black raspberries for the blackberry swirl
- ¼ cup sugar for the blackberry swirl
- 1 tablespoon cornstarch for the blackberry swirl
- 1 tablespoon lemon juice for the blackberry swirl
Instructions
- Start by preheating your oven to 350°F (175°C) and line a 9×9-inch baking dish with parchment paper.
- In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined.
- Press the crumb mixture into the bottom of the prepared dish and bake for 8-10 minutes until slightly golden brown. Let it cool.
- While the crust cools, beat the softened cream cheese and sugar together with an electric mixer on medium speed until smooth.
- Add the eggs one at a time, mixing on low speed, and then blend in the vanilla extract and sour cream until silky.
- In a small saucepan, combine the black raspberries, sugar, cornstarch, and lemon juice over medium heat. Cook until thickened, about 5-7 minutes. Let it cool slightly.
- Pour the cheesecake filling over the cooled crust and drop spoonfuls of the blackberry mixture on top. Use a knife to swirl.
- Bake for 40-45 minutes, or until the center has a slight jiggle. Let cool at room temperature for 15 minutes.
- Refrigerate for at least 4 hours or overnight before serving. Lift the bars out using the parchment paper and cut into squares.
Notes
For an elegant touch, dust with powdered sugar before serving. Serve with vanilla ice cream or whipped cream for added flavor.
