Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn, thawed (or fresh corn cut off the cob)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 avocado, diced (optional but highly recommended)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Optional: 1 jalapeño, seeded and chopped

Instructions

  1. Start by gathering all your ingredients. Rinse the canned black beans in a colander under cold water until they’re free from excess salt or preservatives.
  2. In a large mixing bowl, combine the rinsed black beans, thawed corn, diced red and green bell peppers, and finely chopped red onion.
  3. Now for the dressing! In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and pepper until well combined.
  4. Pour the dressing over the salad ingredients and toss gently until everything is coated.
  5. Finally, sprinkle fresh cilantro on top for a burst of freshness and serve.

Notes

Allowing the salad to sit for 10-15 minutes can help the flavors mingle and deepen.
