Description
A comforting and hearty taco soup that brings together a delightful blend of flavors, perfect for any occasion.
Ingredients
Scale
- 1 lb ground turkey (or chicken)
- 1 medium onion, diced
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) kidney beans, rinsed and drained
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups chicken or vegetable broth
- 1 packet taco seasoning (or homemade)
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, diced avocado, tortilla chips, cilantro
Instructions
- Start by heating a large pot over medium heat. Add ground turkey and cook until browned, breaking it apart with a spoon as it cooks. About 5-7 minutes should do it! Drain any excess fat if necessary.
- Toss in the diced onion, chopped bell pepper, and minced garlic, cooking for an additional 3-4 minutes.
- Next, stir in the kidney beans, black beans, corn, diced tomatoes (with the juice!), chicken or vegetable broth, taco seasoning, cumin, and chili powder. Give it a good stir to combine all the ingredients.
- Raise the heat and bring the mixture to a boil. Once boiling, reduce the heat to low and let simmer for about 20 minutes.
- Taste your soup, and season with salt and pepper as needed. Add additional spices or hot sauce for extra heat if desired.
