Ingredients

  • 2 cups strong bread flour
  • 1 cup all-purpose flour
  • 1/2 cup pumpkin puree (not pumpkin pie filling)
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 teaspoons active dry yeast
  • 1 1/4 cups warm water
  • 1 teaspoon pumpkin pie spice
  • 1 tablespoon honey (for boiling)
  • 8 ounces cream cheese (softened)
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 2 tablespoons pumpkin puree

Instructions

  1. Begin by combining 1 cup of warm water with the active dry yeast and let it sit for about 5-10 minutes, or until it’s foamy.
  2. In a large mixing bowl, combine the bread flour, all-purpose flour, sugar, salt, pumpkin puree, and pumpkin pie spice.
  3. Pour the yeast mixture in, followed by another 1/4 cup of warm water. Mix it until a dough starts to form.
  4. Knead the dough on a floured surface for about 10 minutes until it’s smooth and elastic.
  5. Place the kneaded dough in a greased bowl, cover it with a clean towel, and let it rise in a warm place for about 1 hour.
  6. When the dough has risen, punch it down gently and turn it out onto a lightly floured surface. Divide it into 8 equal portions.
  7. Roll each piece into a ball and create a hole in the center, shaping it into a bagel.
  8. Preheat your oven to 425°F. While it’s heating, bring a large pot of water to a boil, adding honey to it.
  9. Gently drop each bagel into the boiling water, cooking them for 1 minute on each side.
  10. Use a slotted spoon to remove the bagels from the water and place them on a baking sheet lined with parchment paper.
  11. Bake the bagels for 20-25 minutes, or until they are golden brown.
  12. While the bagels are baking, prepare the pumpkin spice cream cheese by mixing the softened cream cheese, powdered sugar, vanilla extract, pumpkin pie spice, and pumpkin puree until smooth.
  13. Once the bagels are out of the oven, let them cool on a wire rack before serving with pumpkin spice cream cheese.

Notes

For gluten-free, use a gluten-free flour blend. For vegan, substitute cream cheese with a plant-based alternative.
