Ingredients

  • 1 pound boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 stalks celery, diced
  • 4 cups chicken broth
  • 1 cup water
  • 1 can (14.5 ounces) diced tomatoes, with juice
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper, to taste
  • 1 cup small pasta (like ditalini or elbow macaroni)
  • 1 cup spinach or kale, chopped
  • Fresh parsley, chopped for garnish
  • Optional: grated Parmesan cheese, for serving

Instructions

  1. Begin by heating the olive oil in a large pot over medium heat. Once hot, add the diced onion and sauté until translucent, about 5 minutes.
  2. Next, add in the minced garlic, sliced carrots, and diced celery. Continue to sauté for another 4 to 5 minutes.
  3. Cut the chicken into bite-sized pieces and add it to the pot. Cook until no longer pink, about 6 to 8 minutes.
  4. Once the chicken is cooked, pour in the chicken broth and water, and add the canned tomatoes, oregano, basil, salt, and black pepper. Stir and bring to a gentle boil.
  5. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes.
  6. Add pasta of choice to the soup and continue cooking for another 10 minutes, or until tender.
  7. In the final few minutes, stir in the chopped spinach or kale.
  8. Once everything is cooked, taste and adjust seasoning if necessary.
  9. Ladle the soup into bowls and garnish with parsley and optional Parmesan cheese before serving.

Notes

Consider using pre-cooked chicken for quicker prep. Experiment with different vegetables or pasta types.
