Ingredients

  • 1 pound beef (chuck roast or sirloin), cut into bite-sized pieces
  • 1 cup fresh mushrooms (such as cremini or button), sliced
  • 1 large onion, chopped
  • 2 cloves of garlic, minced
  • 3 medium carrots, sliced
  • 2 medium potatoes, diced
  • 4 cups beef broth (or vegetable broth for a lighter option)
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika (preferably Hungarian)
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil (or beef fat for richer flavor)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the beef pieces in batches to avoid overcrowding the pot. Sear them until browned on all sides, about 5-7 minutes. Remove and set aside.
  2. Add the chopped onion to the same pot and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.
  3. Stir in the sliced mushrooms and cook for about 5 minutes until they begin to soften and caramelize.
  4. Return the browned beef to the pot along with the chopped carrots and diced potatoes. Stir well to combine.
  5. Add the tomato paste, paprika, thyme, and season with salt and pepper. Stir until all ingredients are nicely coated with the spices.
  6. Pour in the beef broth, scraping up any brown bits from the bottom of the pot. Bring to a gentle boil.
  7. Once boiling, reduce the heat to low, cover, and let it simmer for about 30-35 minutes.
  8. Taste and adjust seasoning if necessary. Serve when the vegetables are tender and the beef is fork-tender.
  9. Ladle the soup into bowls, garnish with freshly chopped parsley, and enjoy!
