- 1 pound beef sirloin, sliced into strips
- 1 large onion, finely chopped
- 2 cups mushrooms, sliced (cremini or button mushrooms)
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 cup sour cream
- 2 tablespoons olive oil or butter
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Optional: 1 teaspoon paprika for added flavor
Instructions
- Heat the olive oil or butter in a large skillet over medium-high heat. Add the sliced beef and cook until browned on all sides, about 3-4 minutes.
- Remove the beef from the skillet and set aside. Add the chopped onions and sauté for 2-3 minutes until translucent. Stir in the sliced mushrooms and cook until browned, about 5 minutes.
- Add the minced garlic and cook for 1 minute. Return the cooked beef to the skillet, then pour in the beef broth, Worcestershire sauce, and Dijon mustard.
- Let the mixture simmer on low heat for 5 minutes. Stir in the sour cream and mix until the sauce is creamy.
- Season with salt and pepper to taste, and add paprika if desired.
- Let the stroganoff rest for a few minutes before serving.

Serve over egg noodles or mashed potatoes, garnished with chopped parsley.
