  • 2 large apples (crisp varieties like Honeycrisp or Fuji)
  • 1 cup walnuts, chopped
  • ½ cup crumbled feta cheese (or goat cheese)
  • ½ cup dried cranberries (or raisins)
  • 1 avocado, sliced (optional)
  • ¼ cup red onion, thinly sliced
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Start by washing your mixed greens thoroughly. Spin them dry using a salad spinner or gently pat them with a clean kitchen towel.
  2. Core and slice your apples, keeping the skin on for color and fiber.
  3. Chop the walnuts coarsely or toast them in a dry skillet over medium heat for 3-5 minutes.
  4. Combine the mixed greens, apples, walnuts, feta cheese, cranberries, and red onion in a large bowl and gently toss.
  5. Whisk together the olive oil, apple cider vinegar, honey or maple syrup, and a pinch of salt and pepper.
  6. Drizzle the dressing over the salad components and toss lightly to coat.
  7. Serve immediately for the best crunch, or refrigerate for up to an hour.
