- 4 large eggs
- 1 teaspoon of vanilla extract
- 1 cup of buttermilk
- 3 cups of peeled and chopped apples (Granny Smith or Honeycrisp work great)
- Optional: 1 cup of chopped nuts (walnuts or pecans)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Whisk together the flour, baking powder, baking soda, salt, and cinnamon in a mixing bowl.
- Beat the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
- Add the eggs one at a time, mixing well after each addition.
- Pour in the vanilla extract and continue mixing until well combined.
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk.
- Fold in the chopped apples and optional nuts gently.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for about 15 minutes before transferring to a wire rack to cool completely.
