  • ½ teaspoon salt
  • 1 tablespoon sugar
  • 6–8 tablespoons ice water
  • 4–5 medium apples (Granny Smith or Honeycrisp)
  • 1 cup apple cider
  • ¾ cup brown sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • A pinch of salt
  • Optional: ½ cup raisins or nuts (like pecans or walnuts)

Instructions

  1. Start by making the pie crust. In a large mixing bowl, whisk together the flour, salt, and sugar. Add in the cold, cubed butter and mix until you have a coarse meal. Gradually add in the ice water, one tablespoon at a time, mixing until the dough forms a ball. It shouldn’t be sticky. Divide it into two disks, wrap in plastic, and refrigerate for at least 30 minutes.
  2. While the dough chills, prepare the filling. Peel, core, and slice your apples thinly, placing them in a large bowl. Pour the apple cider, brown sugar, cornstarch, cinnamon, nutmeg, lemon juice, and a pinch of salt over the apples. Toss everything gently to combine and set aside for the flavors to meld.
  3. Preheat your oven to 425°F (220°C). Roll out one of your chilled dough disks on a floured surface until it’s about 12 inches in diameter. Carefully transfer this to your pie dish, pressing it into the edges.
  4. Pour the apple filling into the prepared pie crust, ensuring it’s evenly spread out. If you’re using raisins or nuts, sprinkle them on top now.
  5. Roll out the second disk of dough and lay it over the filling. You can either cut slits to create a lattice pattern or simply cover it fully. Brush the top crust with a little melted butter and sprinkle some sugar for a delicious golden finish.
  6. Bake the pie in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 30-35 minutes, or until the apples are tender, and the crust has a lovely golden hue. Allow it to cool for about 10 minutes before serving warm.

Notes
