A warm and spiced apple cider donut cake that’s perfect for autumn gatherings.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon salt
- 1 cup apple cider (preferably fresh)
- ½ cup vegetable oil (or melted butter)
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup granulated sugar (for rolling)
- 1 teaspoon ground cinnamon (for rolling)
Instructions
- Preheat your oven to 350°F (175°C). Grease a bundt pan thoroughly or use non-stick baking spray.
- In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk the wet ingredients together: apple cider, vegetable oil, eggs, and vanilla extract.
- Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined.
- Pour the batter into the prepared bundt pan and tap it gently on the counter to eliminate air bubbles.
- Bake for about 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, allow the cake to cool in the pan for 10 minutes before inverting it onto a wire rack.
- If desired, mix the granulated sugar and cinnamon for the topping and roll the cooled cake in it.
Notes
For healthier options, consider using coconut sugar or Greek yogurt as a substitute for some ingredients.
