  • 4 chicken breasts (bone-in and skin-on preferred)
  • 2 cups fresh apple cider
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 2 tablespoons honey (or maple syrup for a vegan option)
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • Optional: 1 cup apple slices
  • Optional: 1 cup Brussels sprouts or green beans

Instructions

  1. Start by marinating the chicken. In a large bowl, mix the apple cider, Dijon mustard, honey, thyme, salt, and black pepper. Add the chicken breasts to the marinade and let them marinate for at least 30 minutes, preferably overnight.
  2. Preheat your oven to 375°F (190°C). Heat the olive oil in a large oven-safe skillet over medium-high heat. Remove the chicken from the marinade and sear it for 3-4 minutes on each side until golden brown.
  3. Remove the chicken from the skillet and set it aside. In the same skillet, sauté the sliced onions and minced garlic until they turn translucent, about 2-3 minutes.
  4. Pour the reserved marinade into the skillet, scraping up any brown bits. Bring it to a gentle boil, then reduce the heat to low and re-add the chicken.
  5. If adding apple slices and Brussels sprouts or green beans, add them now. Bake uncovered for about 30-35 minutes, until the chicken reaches an internal temperature of 165°F (74°C).
  6. Once cooked through, allow the chicken to rest for about 5 minutes before serving.

Notes

Marinating the chicken in apple cider overnight enhances the flavor. For a vegan option, substitute chicken with firm tofu or portobello mushrooms.
