- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup apple cider (fresh or bottled)
- 1 cup peeled and diced apples (like Granny Smith or Honeycrisp)
- ½ cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- Combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a medium bowl. Whisk until well mixed.
- Cream together the softened butter and granulated sugar in a large bowl using an electric mixer until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, and then incorporate the vanilla extract.
- Gradually add the flour mixture to the butter mixture, alternating with the apple cider.
- Fold in the diced apples and, if desired, the chopped walnuts or pecans.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 45 to 50 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
