- 8 oz spaghetti or favorite pasta
- 1 cup heavy cream
- Zest of 2 lemons
- 1/2 cup freshly squeezed lemon juice (about 2–3 lemons)
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- 3 cloves garlic, minced
- Salt and pepper, to taste
- Fresh parsley or basil, for garnishing
Instructions
- Start by boiling a large pot of salted water. Once it’s bubbling, add the pasta and cook it according to the package instructions until al dente.
- While the pasta cooks, grab a skillet and melt the butter over medium heat. Toss in the minced garlic and sauté it for about a minute until it’s fragrant.
- Pour in the heavy cream, stirring constantly. Bring the mixture to a gentle simmer. Add the lemon zest and juice, mixing well.
- Next, add the grated Parmesan cheese to the sauce. Whisk it in until it’s fully melted and creamy. Season with salt and pepper.
- Drain the pasta, reserving a bit of the pasta water. Toss the pasta into the sauce, adding reserved pasta water if needed to thin it out.
- Finally, serve the pasta hot, garnished with fresh parsley or basil.
Notes
For a healthier swap, substitute heavy cream with half-and-half or coconut cream. Consider whole grain pasta or zucchini noodles as a lower-carb option.
